Omelet
with"Gaea Kalamata Olive Tapenade",
Tuna, Peppers and Onions
Lightly beat the eggs and water together.
Sautee the peppers and onions in 1 tbs. "Gaea P.D.O.
Sitia Extra Virgin Olive Oil". Remove with a slotted
spoon. Pour the eggs into the skillet. Let it set over medium-low
heat. Spread the pepper-onion mixture over half the omelet.
Spoon tuna and "Gaea Kalamata Olive Tapenade"
on top. Carefully fold the omelet in half. Cook for another
minute or two, covered, and serve.
