Cut off tops of tomatoes. Keep the caps. With a small spoon
scoop out pulp and seeds. Fill with a little of the "Gaea
Smoked Aubergine Relish (Eggplant Spead)". Sprinkle
with parsley, cover with tomato caps and serve.
